Luisa Torri is the Prorector and a Full Professor of Food Science and Technology at the University of Gastronomic Sciences of Pollenzo. With a Ph. D. from the University of Milan, her expertise lies in sensory and consumer science, where she directs the universitys Sensory Analysis Lab and researches consumer attitudes towards food.
Her research investigates consumer attitudes towards unconventional food sources, such as the potential for jellyfish to be used in cuisine.
