David is a fungal biologist and food innovator with a Ph. D. from the University of California, Berkeley. As Co-founder of Norwegian Mycelium (NoMy), he transforms food industry byproducts into sustainable fungal proteins. He has also served as a Norwegian representative for a UN technical committee and is the creator of the award-winning restaurant Hrimnir Ramen.
Outside of his scientific and culinary work, David is a passionate and high-level cyclist. He was previously a member of the Norwegian National Cycling Team, competing in the world cyclocross championships for three consecutive years. His interest in gastronomy led him to train in the art of ramen in Japan.
Unique fact: David gave a TEDx talk titled “How to think like a fungus” which was later featured on the official TED. com website.
